My Baby Shower!

My sweet friends threw me the most beautiful baby shower I have ever been to!  They are so precious and special to me, and I can't thank them enough!  Here are some pictures from the wonderful day!

Rodeo Cook Off

I adore the rodeo!  Everything about it!  But sadly, this year is a little rough for me and the rodeo.  Being 8 months pregnant, cowboy boots, and lots of walking just don't mix.  So, we only went twice this year, to Rodeo Cook Off, and to Clay Walker.  We had so much fun, but after the Cook Off, I was swollen for 3 days.  Too much on my feet!

Britney was so sweet to me.  She sat with me when I wanted to sit, she always asked how I was feeling and made sure I was okay, and she helped me find this funnel cake!  YUMMY!  No, I didn't eat it all, and yes, I did get strawberries on top - so it was kind of beneficial to Jaxson...right?  Please note the sugar already on my shirt, even before I started eating - haha!
The boys - Brandon, Hubby & Josh.  They had so much fun!

The rodeo is barely over this year, but I'm already looking forward to next year!

I made wings!

Hubby and I love Buffalo Wild Wings.  Do you ever eat there?  Ugh...it is just SO GOOD!

Well, we are trying to save moola and calories lately, so when I came across this recipe in Redbook, I decided to give it a try.  Usually my first attempts fail, but this one was a success!  We loved it!

Here's what you need -
1/2 cup of flour
1/4 cup of breadcrumbs (I had Italian on hand, they worked great)
2 tsp salt
2 tsp cayenne pepper (we didn't have any of this, so I used Cajun seasoning that we had)
2 egg whites
6 Tbsp hot red pepper sauce (I used Franks)
3 large chicken breasts, cut into small chunks (I made about 30 of them)
2 Tbsp canola oil
2 Tbsp butter or margarine
Celery and carrot sticks

In a shallow dish, combine flour, breadcrumbs, cayenne, and salt.
In a separate bowl, whisk egg whites and 1 Tbsp red pepper sauce.
Dip the chicken tenders in egg mixture.  I let mine marinate for about an hour.  I don't know if it makes a huge difference or not.
Put a large skillet on the stove on medium high heat.  Cover the bottom of the pan with canola oil.
Put the flour mixture in a Tupperware.
Add 1/4 of the chicken, put the lid on, and shake it baby!!
Put the coated chicken in the skillet, and cook for 4-5 minutes, turning at least once.
Remove from heat and cover to keep warm.
Cook the next batches this way, adding additional oil as necessary.
Heat your butter and the remaining pepper sauce in a large Tupperware bowl in the oven. 
Add the chicken, put the lid on, and shake-a shake-a shake!!
Serve warm with the dressing of your choice.  Hubby doesn't like blue cheese, so we eat ours with ranch :)

32 Weeks!

I'm 32 Weeks Pregnant!


Pregnancy Highlights:

How Far Along: Baby is the size of a head of lettuce!  And weighs about 4 lbs.  I don't know about you, but I've NEVER seen a head of lettuce that big - haha!
Total Weight Gain: Gained 29 lbs! 

Belly Growth: 16.5 inches.

Maternity Clothes: Oh yes!!
Gender: It's a boy!  Jaxson Jeffrey Ellis

Movement: Constant!  He is starting to hurt me sometimes!

Sleep: This week wasn't too bad.  I'm starting to get used to getting up at night to potty, and I can go right back to sleep.  I'm so thankful.
Symptoms: Just big!  And, I'm starting to have bad indigestion - yuck.  Other than that though, I'm good to go!

Cravings: I can't stop eating the Chocolate and Peanut Butter Ice Cream.  Oops.

Emotions: Good this week.  I am starting to get nervous about the whole delivery ordeal.  Our classes have scared me a little bit!  I'm so ready to meet him though!
Best Moments of the Week - We picked our pedi!  He is so nice and I am really looking forward to him helping us with Jaxson.  I asked about a million questions and he didn't make me feel silly or anything.  It feels so much better to have that done!

Our Nursery - A Work In Progress...

I haven't posted pictures of Jaxson's nursery in awhile, so I thought I'd share a few.

Sweet gifts that our loved ones have given Jaxson.

The curtains that hubby hung so carefully, and my sweet Momma hung for me.  We decided on a car theme, and I really like these car pictures on the wall.

The wall the opposite the crib.  His changing table, the rocker, and lots of stuff that isn't organized.

His changing table, and my diaper bag that my office gave me.  I just love it!  I'm not sure about the diaper stacker.  Did any of you use one?

This is where the tall chest of drawers is going to go.  Currently, it is a catch all for his things that don't have a home yet :)
