Crock Pot Chicken

So, I am on quest for easy dinners that keep my husband interested...we are trying to eat healthy and so tired of chicken and rice...so I thought I would try something new.

Put two large frozen chicken breasts in my crock pot this morning, and poured a can of rotel over it. I set it on low, and off to work I went. This was at about 6:45 this morning.

When Jeff got home around three, I asked him to stir it up, and he added a little water and some salsa. I have no idea how much, but I think it would have been fine without it if you didn't want to mess with it. It cooked for about 11 hours on low, but I think it would have been fine at 6-7 hours, or less if the chicken wasn't frozen.

I got home, cooked some corn and some minute rice, and put the chicken and the rotel over a bed of rice. It was so good! The chicken was so tender and juicy - it will definately be in our dinner rotation!
